“Ishizuchi Jinmai Ginjo Yamada Nishiki 50” is the main product of “Ishizuchi” alongside the “Junmai Ginjo Green Label”.
The raw rice is made entirely of Yamada Nishiki from Tokushima Prefecture.
Koji brewing is made with the same recipe as Daiginjo with whole-box koji, with moromi slowly fermented at low temperatures.
In the milling, washing, immersion, and bleaching processes, we focus on the processing of raw materials in detail, such as rice dying period and weighing work.
A liquor that has been squeezed by gently compressing ripe moromi.
