A FAMILY OWNED AND OPERATED BUSINESS
Backwoods Distilling Co. was founded by Leigh and Bree Attwood in 2017. Both raised in North East Victoria, we returned to the region with our young family after years of city-living, working and travelling. A love of whisky, science and craftiness soon evolved into a dream to open a distillery. Backwoods Distilling Co. is the culmination of this dream. We are passionate about creating high quality spirits that vividly capture the flavours of Victoria’s High Country, and we aim to put Victoria on the map as a premier craft spirits destination.

SUPPORTING AUSTRALIAN INDUSTRIES
The true star of our distillery is our copper-pot still. ‘Stillvester’ is a one of a kind creation, built by Mark Burns of Burns Welding and Fabrication in Griffith, NSW. Together, we purposefully designed the 1250L Stillvester to create a spirit that is both complex and refined.

SUPPORTING AUSTRALIAN FARMERS
We source our malted grains from Voyager Craft Malt in the nearby Riverina region. Voyager Craft Malt produce small batch, single origin artisan malts for craft brewers and distillers. Voyager source their grain from local, independent growers and use sustainable agricultural practices. We are proud to be using 100% Australian farmed and malted grains.

Our spent grain is delivered to a local farm for animal feed, completing the circle and making our distillery virtually waste-free.

HONOURING AUSTRALIAN PRODUCERS
Our barrels are hand selected from the Australian whisky and wine industries. Our fleet include 100 and 200 litre casks that have previously held whisky, red or fortified wines.

While honouring the traditional processes of whisky making, being a craft distillery, we aim to push the boundaries to create innovative whisky experiences. We have a number of special projects in progress – including a fleet of red gum casks and a collaboration batch with a local craft brewery.

BACKWOODS RYE WHISKY
A Heritage Ryecorn is the chief ingredient in our Rye Whisky. It delivers an earthy, fresh rye bread aroma, toasty/biscuit like sweetness and a classic dry, spicy finish.

Our mash bill also includes barley (for sweetness) and wheat (for nuttiness). And finally we add a small amount of chocolate malt. You will notice this on the finish, as it lingers on the pallet, urging your next sip.

The wash is twice-distilled in our custom-designed copper pot still and transferred to its chosen cask for maturation. We have Rye Whisky maturing in a variety of American and French Oak casks, that have previously held whisky, red or fortified wines and expect to have our first Rye Whisky release in 2020.

BACKWOODS WILD RYE
Our Wild Rye is crafted with the same mash bill as our Rye Whisky. The wash is distilled twice in our custom-designed copper pot still, and a very tight cut is made to ensure that only the gentlest portion of the hearts is taken. The result is a spirit that is rich in spice and sweetness.

Wild Rye can be enjoyed neat or as a great base for many cocktails. Our Wild Rye Batch #3 is available now – limited bottles remaining.

BACKWOODS SINGLE MALT WHISKY
The mash bill for our Single Malt Whisky is made up of three grain types – Atlas LaTrobe (delivers a gentle and sweet flavour), Veloria Schooner (brings in a grassy and earthy profile) and Voodoo Schooner (rounds it out with honey and caramel). All of our grains are sourced from Voyager Craft Malt in the nearby Riverina region.

The mash is left to ferment for a minimum of five days, and then twice-distilled in our copper pot still. The spirit is then transferred to its chosen cask for maturation. We have Single Malt maturing in a variety of American and French Oak casks, that have previously held whisky, red or fortified wines and expect our first Single Malt release to be in 2020.
