A fruity mouthful, full of soft and sweet tannins. Date and raisin stand out with a touch of nuts and spiciness at the end.
Cuma is the range of organic wines produced by Michel Torino Estate. The practices in the vineyards and the winery have followed strictly controlled and certified organic processes. The vineyard uses only natural fertilizers are used and weeds control is with machetes. Cuma means pure and clear in AymarÃ¡, the language of a tribe who inhabited the Cafayate region in the Inca’s time.

Don David Late Harvest Torrontes 2010. By leaving Torrontes out on the vine longer than normal to concentrate, Don David have made a beautiful sweet wine. It shows butterscotch, jasmin, grapefruit, floral notes and much more. The mouthfeel is velvety and offers liquorice, raisins and age has added some savoury/nutty notes. A great wine to drink over the next few years, it will go with Roquefort, fresh fruits nothing at all.

Terroir: Each selection in the Don David range is sourced from entirely estate owned vineyards throughout the Cafayate Valley. Vineyards sit at elevations well above 3,000 feet with many sitting above 6,000 feet. The power of the sun at these elevations combined with very little moisture or pests leads to wines of unique purity and concentration.
Vinification: Concentration and varietal expression are the goals of both the red and white wines in this range. The red wines undergo a 5 hour thin covering maceration which extracts additional concentration followed by more than a week of cold maceration in steel tank and 9 months in the cellars in a combination of French and American oak.

Pampas Reserve Malbec 2018 displays richness and depth of plums, black fruits, more-ish savoury roast meat characters balanced by red fruits, refreshing thread of acidity and fine grained tannins (even at day 3 after opening the wine revealed layers – a sign of pedigree in a young wine) 13.5% Alcohol. Under cork.

Ricardo Santos Malbec 2012. Very dark purple color, almost black. Medium plus nose shows menthol, mint, dried black fruit, blackberry, some earth tones from age, like old cedar, forest floor, sour plum. Palate shows big fruits and smooth structure, dried black fruit layers, then the age comes through with nice compote, game, mushroom. The finish brings more aggressive tannins than came on at first, showing structure, medium acidity, medium plus alcohol. Also showing better with air/time, should have decanted.
