Four Pillars Bloody Shiraz Gin 2019. 2019 was a terrific season for Victorian cool climate Shiraz. And that has given us another belter of a Bloody Shiraz Gin vintage. After a good spring rain, summer brought serious heat resulting in more dominant dark fruit notes than 2018 – tons of delicious plum and blackberry.
Straight up you’ve got those pine forest notes, white pepper and spices, and the gin is beautifully balanced with a delicious sweetness and nice tannins to finish.
The ABV of this totally unique gin is 37.8%, unlike Sloe Gin where the alcohol less than 30%. So it packs a punch and is ideal in a range of cocktails. The gin is unfiltered, so it will develop secondary fruit characters beyond two years, and is best consumed within two years of vintage.
Drink it young and fresh with red berry and spice characters, or enjoy it as it develops.

The firm of Emile Pernot, now more than a century old, has a direct lineage rooted in the origins of the famous liquor named “absinthe”, and you’ll discover that the story is rather surprising seeing the coincidences!
Indeed, the legend says that on Dr Ordinaire’s death, at the end of the 18th century, his precious original recipe for the elixir passed to two Swiss sisters from the Henriod family. They in turn sold the recipe to a Major Dubied from Couvet, who commercialized the product and, together with his son-in-law Henri-Louis Pernod, established the very first absinthe distillery in Pontarlier in 1805. Only 16 liters of absinthe were produced each day by the 2 alembics of this little distillery.

Pot & Still Fig Gin. Our Property Glen Ewin Estate in the Adelaide Hills has a history of growing figs for 175 years. For the last 20 years we have grown them using organic management practices with the trees being spray free for that period and marketed as Willabrand.
Our figs are poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate.
Pour over ice and enjoy or add some lime for a flavor explosion, a perfect balance of sweetness and acidity which stretches the profile, then add a little good tonic to create the perfect G & T.
