Our Dry gin is a Nordic take on a traditional dry gin that has got its characteristics from 7 organic botanicals – juniper berries, coriander seeds, angelica root, lemon peel, heather, elderflower and rosemary. Our blend gives the gin a delicate flowery taste parallel to the classic juniper and citrus notes. INGREDIENTS
We choose to use the best ingredients available, rather than cut corners; lemons and oranges grown in New Zealand, hand picked cherries from Otago and sustainably sourced honey. Our goal is to not only use the best ingredients, but to help grow New Zealand business along the way.
DISTILLING PROCESS
Our ethanol is made from sugar cane the same way they did it in the 1900’s. This is unique in New Zealand. It’s cheeper and easier to use the alternative, whey ethanol, (made from milk), which is used by most brands. We believe in using the best to make the best, rather than taking short cuts that compromise the quality of our product.
Our still is New Zealand made and custom built for our Distillery. By choosing to get our still made locally we where able to insure the absolute best quality and craftsmanship, while supporting the grass roots distilling industry in New Zealand.

The fresh spirit of Tasmania’s ancient Huon Pine, iridescent abalone shell and pristine water. A nod to a London Dry, our Dry Gin features the four key botanicals of sage, abalone shell, Huon Pine needles and red grapefruit. Fresh sage is grown in our distillery garden and we source the shell whilst on family abalone dives. Once cleaned, the shell is dried and broken into tiny pieces to infuse in the gin. Abalone shell, used in Chinese medicine, is a calcium carbonate to neutralise the acids and adds a slight salinity. Huon Pine (Lagarostrobos franklinii) is a species of conifer native to Tasmania. It is found by the edge of rivers and is an incredibly slow growing, revered local timber. The needles provide pine notes that differ to juniper and add to the complexity of the dryness.
Taylor & Smith is an independent artisan distillery in Hobart owned and run by Natalie and Ben. We experiment with Tasmanian botanicals and carefully craft our base spirits to synthesise the Tasmanian landscape and write out the stories of place.
The scale of the season is compressed in Tasmania so you get an intensity of flavour in our botanicals. The air is phenomenal and the water that feeds directly to the distillery comes from a lake of snow melt at Mount Field National Park.
When we first started making spirits we’d take around little jam jars of gin and leave them on our neighbours doorstep. People would turn up on a Friday night home from work and find a jar of gin. In reciprocation they would turn up at our place with lemons, quinces, cumquats or other botanicals they were hoping would feed back into the gin. Along with experimentation, another defining characteristic of our process is our focus on the handmade. We don’t have any automated systems. It’s come from the heart. We love to bring people together through our spirits, and small things that are beautiful in the right place can enhance a moment.

An homage to the popular history of Oaxacan clay-pot mezcal aged in brandy barrels, Don Amado Reposado uses exhausted brandy barrels from Pedro Domecq to create a nostalgic flavor of earthen-smoked maguey with the soft caramel and butterscotch notes of American white oak.
Familiar Mexican flavors of roasted corn slathered in butter, hints of vanilla and cinnamon, tropical fruit and dried chilies are balanced with a moderate amount of smoke leading into barrel notes of a satisfying, slightly spicy vanilla-driven extended finish.

DON AMADO MEZCAL
In the highlands of southern Mexico, the renowned Arellanes family has been crafting one of the region’s most celebrated mezcals since the late 1700s.
Eleven generations of continual mezcal distillation with a legendary commitment to craftsmanship and experimentation have culminated in a spirit that is simultaneously complex and approachable. Don Amado is made from earthen roasted maguey hearts which are, after crushing, fermented together with their piña fibers for a rich maguey character. The mash is then double distilled in small traditional ceramic clay pots. Aged varieties are matured in American oak casks previously used for barreling Pedro Domecq brandy.

VIEW
Crystalline and translucent, with light golden flashes that recall its origin and rest, perfectly clean and bright, great grip in the glass forming tears and legs of great body.
NOSE
Very pleasant and soft, with a range of aromas ranging from fruit, sweet and citrus orange and grapefruit with notes of cooked agave honey, light vanilla and cocoa in a perfect balance of wood without exaggerating its presence.
PALATE
the nose notes are confirmed in the mouth; soft product to the palate, Balanced and fresh, with a light cocoa flavor, fresh and sweet fruits, peach and red fruits; of great persistence on the palate.

The first references of Vermouth in Gonzalez Byass go all the way back to 1896. Our inventory shows the existence of Vermouth between 1896 and 1926. First it was found in sections about imported wine and later, from 1909, it was included in the bottling in various regions.
The Vermouth La Copa range is based on these recipes and the label designs are referring to the ancient Vermouth labels recovered from Gonzalez Byass’ historical archives.
Gonzalez Byass Vermouth La Copa Roja is produced from 8 year old Oloroso and PX soleras blended with a mix of botanicals. These 8 botanicals (wormwood, savory, clove, orange, cinnamon, nutmeg, angelic root and cinchona bark) were carefully selected to achieve the perfect bitter-sweet, aromatic balance. Of course, like all good family recipes, the exact proportions are a closely guarded secret, kept under lock and key in the winery!

The Viognier gives fruit and perfume while the Marsanne lends it’s waxy texture and the Roussanne gives a hint of savouriness. This wine is bottled un-fined and un-filtered so a little bit of sediment is both likely and intentional.

Ageing takes place in steel vats for 9 months (no oak), during which time many different decantations are done before bottling and further ageing in bottle before release in spring.
Tasting Notes
The colour of the wine is ruby red, the aroma intense and charming, with cherry, plum and red berries. The palate is complex, well-structured, harmonious and long.
Lavignone is the name of one of the farmhouses that was built on the property in the 1700s. Barbera reaches one of its finest expressions in Barbera d’Asti, which achieved DOCG status in 2008.
